A whole halibut came in this morning, about four kilos, which is small enough to be sweet and big enough to feed the section.
We are roasting it on the bone with brown butter and capers. It is on the specials board tonight and probably tomorrow, and then it is gone.
Bar seats are first come.
What changed: Replaced the category ("fresh seafood") with the actual fish, its size and how it is cooked, and let the natural scarcity do the work the "book now" was doing.

Promoting happy hour

Between four and six on weekdays the bar is the best seat in the building. It is quiet, the light comes in from the west side, and the kitchen is prepped but not slammed, so the snacks come out fast.
Draft beer and the house wines are reduced, and so is the plate of olives and anchovies that most people order without looking at the menu.
Wednesday through Friday are the easiest days to get a seat.
What changed: Swapped three empty adjectives for a description of what the room is actually like at that hour, which is the real product being sold.

A new menu launch

The autumn menu went on last night. Six things changed.
The biggest is that we moved to braises — short rib, lamb shoulder, and a mushroom dish that takes as long as either of them. All three go on the day before, which means the kitchen smells like this from about two in the afternoon.
The summer tomato plate is gone. It will be back in about ten months and we are as annoyed about it as you are.
What changed: Named the number of changes, described the one that matters and acknowledged the loss of a favourite, which gives regulars something to react to instead of a gallery to scroll past.

Four days, two of them closes, and one of those is Saturday. The section runs about seventy covers on a busy night with two people on it. Pay range is in the first comment.
What is genuinely hard: the changeover to the autumn menu means relearning six dishes in a week. What is genuinely good: the prep list is written by the person who cooks it, and we staff for cover rather than hoping nobody gets sick.
Message the account or come in before four on a weekday.
What changed: Replaced "passionate" and "family" with the shift pattern, the volume and the pay range, and named one hard thing so the good things are credible.

That is the cacio e pepe, which is on the menu because our pasta cook argued for it through two rounds of cuts. The trick is that the sauce gets built in the pan with pasta water and no cream at all, which is why it has to be eaten immediately.

What changed: Stated the permission plainly, added the information only the restaurant could supply, and dropped the contest framing that turns a compliment into a marketing ask.

Holiday closure notice

We will be closed from Dec 24 to Jan 2 for the holidays. Thank you for your support this year. Happy holidays to all our wonderful customers.

We are closed from the twenty-fourth of December through the second of January.
The kitchen has run every service since we opened in February and the team has earned the week. Gift cards still work when we are back, and the reservation book for January is open now.
If you need somewhere on those dates, the wine bar two doors down is open through the whole stretch and we would send our own family there.
What changed: Kept the dates clear, gave a human reason for the closure, and pointed guests somewhere useful instead of ending on a generic sign-off.

Introducing a staff member

Meet Chef! One of the hardest working members of our amazing team. We are so lucky to have such a talented crew.

Our pastry chef starts at five in the morning, which means she has finished the day's laminated dough before the rest of the kitchen arrives.
The croissants take three days from mixing to baking. The dessert on the menu right now took her eleven attempts, and the change that made it work was cutting the sugar in the caramel by about a third.
She is here Wednesday to Sunday, and she is the reason the bread is what it is.
What changed: Traded generic praise for three concrete details about what the person actually does, which is the only kind of staff post anyone reads past the first line.

Promoting a slow midweek night

Tuesday is the night we cook for ourselves a little.
It is the one service where the kitchen has time, so the specials board is longer and usually stranger — this week there is a whole roasted onion dish that would never survive a Saturday.
No reservation needed. If you have ever wanted to ask a cook what to order, this is the night they can actually answer.
What changed: Reframed low demand as an advantage for the guest instead of a plea for support, and gave a specific reason the quiet night is the better night.

A price increase

Due to rising costs, some of our prices will be increasing slightly. We appreciate your understanding during this difficult time.

Four dishes went up this month. The pasta, the steak, the burger and the lunch set.
The reason is not complicated: the beef contract we were on ended, and the new one is meaningfully higher. We held the old prices for as long as the freezer stock lasted.
Everything else on the menu is unchanged, and the lunch set is still the cheapest full meal we serve. If a price change ever makes something unaffordable for you, tell us — we would rather know.
What changed: Named exactly which items changed and why, which removes the suspicion that a vague increase is hiding a bigger one.
